Green Salsa Recipe

I have been forgetting to post my wonderful green salsa recipe!  I haven't taken any cute pics for the blog of it but I think many of you have seen it on my instastories when  I am cooking authentic Mexican food!

I usually make a small portion because I love freshly made salsa.  So I don't like making huge quantities.  Here is what I put in mine...

  • 4-5 green tomatillos
  • cilantro
  • avocado
  • 2 jalapenos or (any type of green chiles you like and if you like it super spicy then add more)
  • 1/4 cup of chopped onion
  • salt
  • lime

Directions on how to cook it up:

1. I wash my tomatillos and place them in about 1 and a half cups of boiling water (you make sure you have enough water to cover the tomatillos).  I then add the onion and a little salt let it sit on the hot stove for a while ( 15-20 mins and then turn off so it can cool down).

2.  You pour all of the ingredients into the blender and this is where you add the chopped cilantro and you can add an avocado and even some greek yogurt if you want creamy salsa.   If you want regular salsa then you can add half an avocado and lime.

3.  After it is all blended you can taste it and if you feel it needs more salt or lime, feel free to add what you like.  You can also fry the salsa for about 20 mins for a better taste, but since I try and keep it healthy...I would refrain (although it does taste amazing)!

Serve with tortilla chips, pita chips or use on anything you want to enhance flavor on and ENJOY!
